We go crazy for cookies at our house. Bashful has a dusting of confectioners sugar on his nose. 😎 Even my in-laws liked these cookies. They’re great for tea or lemonade.

LEMON BARS
*Makes 16 squares*

Crust
1/2 cup unsalted butter, softened
1/4 cup confectioners sugar
1 cup all-purpose flour
1/4 tsp salt

Filling

2 eggs + 1 egg yolk
                                                                                                                          1 cups granulated sugar
1/4 teaspoon salt
1/4 teaspoon vanilla
1 tablespoon freshly grated lemon zest 
                                                                                 1/4 cup freshly squeezed lemon juice
                                                                                        2 tablespoons all-purpose flour
                                                                            Confectioners sugar for dusting

DIRECTIONS

1. First, preheat your oven to 350 deg F and lightly oil/grease a 8×8 inch baking pan. Prepare your crust by mixing together the softened butter, sugar and salt. Once you have a smooth mixture, add in the flour and mix until you get a soft dough. Press the dough into your prepared baking pan. Bake the crust for 20 minutes, until it is just slightly golden brown.

2. Let the crust chill and prepare your filling. Whisk together the eggs, granulated sugar, lemon zest and juice and flour and pour over the chilled crust. Bake (at 350 deg F again). Bake on center rack until custard is set and top has a thin white sugary crust, 25 minutes. Let cool completely before cutting into bars. Dip knife into very hot water, run around the edge, and cut into 16 squares. Dust cookies with 1 teaspoon confectioners’ sugar.
